The Craftsmanship

• Shade-Grown Heritage: Cultivated under a natural two-tier canopy of native forest trees in the Western Ghats. This traditional agroforestry system ensures a slower maturation of the coffee cherry, which is essential for developing the bean’s high density and complex oil content.

• Meticulous Wet-Processing: The "Parchment" method involves pulping the cherries immediately after harvest, followed by controlled fermentation and thorough washing in fresh spring water. This removes the mucilage and ensures a "clean" flavour profile, free from the earthy or fermented taints associated with unwashed Robustas.

• Precision Hand-Sorting: Following mechanical grading for Screen 18 uniformity, the coffee undergoes rigorous manual hand-sorting. Our skilled artisans inspect the beans to remove any discoloured or imperfect specimens, ensuring that our Robusta Parchment AA delivers a visually flawless and high-performing product for our international partners.
