This grade is highly sought after by specialty roasters for its exceptional roasting uniformity and its vibrant, punchy flavour profile.

Tasting Notes: A complex and concentrated cup featuring dark forest berries, honey sweetness, and a hint of wild spice. The finish is clean and lingering with a touch of bittersweet cocoa.

The Craftsmanship

Natural Concentration: The craft begins on the high-altitude estates of Karnataka, where the cherries are left to dry completely in their own skin. This allows the single, dense Peaberry to slowly absorb all the sugars and nutrients of the fruit, resulting in a flavour intensity that is far superior to standard beans.
Manual Drying Ritual: To preserve the integrity of these "pearls," the cherries are spread on elevated drying mats and hand-raked meticulously throughout the day. This ensures the fruit dries evenly without any fermentation taints, preserving the bean's bright, blue-green colour.
The Final Separation: Because Peaberries are naturally mixed with flat beans, the craft lies in the final grading. Using a combination of specialised circular-hole screens and rigorous manual hand-sorting, we isolate these round beans. This labour-intensive process ensures that our Arabica Cherry PB is a uniform, high-density lot that roasts with incredible precision.
