The Craftsmanship

  • Traditional Sun-Drying: The craft of our Arabica Cherry B lies in the slow, natural drying of the whole coffee cherry. Spread across brick patios in the high-altitude estates of Karnataka, the cherries are manually turned and raked several times a day. This ensures uniform drying and prevents the development of "off-flavours," preserving the clean, sweet character of the bean.

  • Shade-Grown Heritage: Cultivated under a natural multi-tier canopy in the Western Ghats, these beans develop slowly in the shade. This slow maturation is essential for natural coffees, as it allows for the maximum accumulation of sugars in the cherry, which are then infused into the bean during the drying stage.

  • Rigorous Hand-Sorting: After the cherries are de-husked, the green beans undergo meticulous mechanical sifting to isolate the Screen 15 profile. This is followed by manual hand-sorting, where our skilled artisans remove any defective or discoloured beans. This high level of human intervention ensures a consistent, clean, and reliable export product.
