The Craftsmanship

• Controlled Natural Drying: The craft of our Arabica Cherry AB lies in the slow, natural dehydration of the whole cherry. Spread on clean drying yards in the high-altitude estates of Karnataka, the cherries are manually turned every hour. This labour-intensive process prevents moisture pockets and ensures the bean absorbs the fruit’s natural mucilage uniformly.

• Shade-Grown Integrity: Sourced from the Western Ghats, these beans are grown under a multi-tier forest canopy. This traditional agroforestry method protects the cherries from direct harsh sunlight, allowing for a slower maturation that develops a denser bean with a higher concentration of essential oils.

• Rigorous Curing & Sifting: After de-husking, the green beans undergo meticulous mechanical sifting to achieve the AB size profile. This is followed by manual hand-sorting to remove any discoloured or defective beans. This human intervention ensures that, despite being a mid-tier grade, the quality remains consistent and defect-free for the global market.
