Tasting Notes: A bold and complex fusion of bittersweet dark chocolate, overripe berries, and a distinct "winey" finish. Its large size and high density make it particularly resilient to dark roasting, where it develops deep, smoky caramel notes.
The Craftsmanship
Elite Estate Selection: The craft of the AAA grade begins with the selection of specific estate blocks where the trees are oldest, and the cherries grow largest. Sourced from the high-altitude regions of Karnataka, these cherries benefit from nutrient-rich soil and a perfect microclimate.
Extended Sun-Drying: To achieve the AAA standard, the drying process is managed with extreme precision. The cherries are spread in thin layers on tiled patios and hand-turned manually throughout the day for up to three weeks. This slow, natural dehydration ensures the sugars penetrate deep into the bean without any risk of mould.
Precision Sifting & Sorting: Because Screen 19 beans are rare, the grading process is exhaustive. After mechanical sifting, the beans undergo intensive manual hand-sorting.
