The Craftsmanship

• Artisanal Sun-Drying: The beans are spread on clean brick patios or elevated drying beds immediately after harvest. The craft lies in the manual rotation of the cherries every hour to ensure uniform drying. This prevents localised fermentation and ensures the parchment remains healthy and clean.

• Shade-Grown Heritage: Cultivated under the multi-tier canopy of the Western Ghats, these beans develop slowly. This slow maturation is critical for "Natural" coffees, as it increases the brix (sugar) content of the cherry, which translates into the bean's characteristic sweetness.

• Strict Quality Control: After the dried cherries are mechanically de-husked, they undergo a rigorous Manual Hand-Sorting process. Our skilled sorters meticulously remove any defective beans, ensuring that the "AA" grade maintains its reputation for purity and consistency in the global market.
