Our Arabica Cherry A represents the finest grade of unwashed (natural) Indian Arabica. Unlike the "Plantation" grades which are pulped and washed, Cherry coffee is dried with the fruit skin intact. The "A" grade is specifically selected for its bold size, retained on a 6.65 mm (Screen 17). This processing method preserves the natural sugars of the coffee fruit, resulting in a bean that offers a distinctively different profile—one that is wilder, fruitier, and more robust than its washed counterparts.

The Craftsmanship

  • Sun-Drying Heritage: The craft of Arabica Cherry lies in the drying process. The cherries are spread on clean, elevated drying mats or brick patios under the intense Indian sun. This requires constant manual turning and raking to ensure the fruit dries evenly and prevents any over-fermentation, which could spoil the clean taste of the bean.

  • Shade-Grown Integrity: Sourced from the high-altitude estates of the Western Ghats, these beans benefit from the slow-maturing process under a natural forest canopy. This allows the fruit to develop a higher sugar concentration, which is then absorbed by the bean during the natural drying phase.

  • Meticulous Curing: Once the cherries are "husked," the green beans undergo a rigorous cleaning and grading process. We employ both mechanical sifting and manual hand-sorting to ensure that our "A" grade is free from "black" or "sour" beans, delivering a uniform and reliable product to the global market.
