Our Robusta Cherry PB is a unique specialty selection of unwashed (natural) Indian Robusta. A Peaberry is a natural mutation where only one dense, oval-shaped "pearl" bean grows inside the cherry instead of the usual two flat beans. By processing these rare beans using the "Cherry" (natural) method—drying them slowly within the whole fruit—we create a coffee of immense concentration. This grade is highly coveted by roasters for its superior roasting uniformity and its ability to deliver a massive "kick" with a sweet, winey complexity.

Aroma: Intense and pungent with heavy notes of toasted malt, spice, and a hint of dark fruit.
Acidity: Crisp and more pronounced than flat-bean Robustas; the natural processing adds a soft, fruity undertone to its bright character.
Body: Powerfully heavy and velvety. Due to its high density, it produces a luxurious, thick crema that is the benchmark for traditional espresso blends.
Tasting Notes: A concentrated and savoury profile featuring deep notes of bittersweet chocolate, black pepper, and caramelised sugar. It offers a cleaner, more vibrant sweetness than standard Robustas, with a long, satisfying finish.

The Craftsmanship

Shade-Grown Concentration: Sourced from the high-altitude estates of the Western Ghats, these Peaberries mature under a two-tier forest canopy. This slow maturation allows the single seed to absorb a higher concentration of nutrients and essential oils, resulting in a bean of exceptional density and flavour intensity.
Artisanal Natural Drying: The craft lies in the patient dehydration of the whole cherry on elevated drying mats or clean brick patios. The cherries are manually hand-raked and turned every hour to ensure the single Peaberry inside absorbs the fruit's natural sugars uniformly, preventing any fermentation defects.
The Precision Grade: Because Peaberries are harvested alongside flat beans, the isolation process is a work of precision. Following mechanical sifting through specialised circular-hole screens, the beans undergo exhaustive manual hand-sorting. Our artisans ensure that the final lot is composed of perfectly uniform, rounded "pearls," ensuring a flawless and consistent roast every time.
