The Craftsmanship

Shade-Grown Origin: Cultivated under the natural forest canopy of the Western Ghats, these beans mature slowly. This traditional Indian method ensures that even our boldest "AA" Robustas possess a high density and a richer oil content than sun-grown varieties.
Artisanal Sun-Drying: The craft lies in the natural dehydration process. Whole coffee cherries are spread across brick patios and manually raked and turned every hour under the sun. This meticulous handling ensures uniform drying and allows the bean to absorb the natural sugars from the fruit pulp without any over-fermentation.
Rigorous Sorting: After the dried cherries are mechanically de-husked, the green beans undergo a final, intensive Manual Hand-Sorting. Our skilled artisans remove every imperfection, ensuring that the "AA" export lot consists of uniform, flawless, jade-colored beans that meet the highest international standards.
