The Craftsmanship

Traditional Shade-Grown Method: Cultivated under the protective canopy of native forest trees in the Western Ghats. This slow-ripening environment allows the beans to develop a superior density, ensuring they remain resilient and flavorful during the high-heat roasting process.
Meticulous Sun-Drying: The craft lies in the natural drying phase. Whole cherries are spread on clean, paved yards and manually raked and turned repeatedly. This labour-intensive process ensures that the fruit dries evenly, preventing the development of harsh "rubbery" taints and locking in the bean’s natural sugars.
Mechanical and Manual Sorting: Following the de-husking of the dried cherries, the green beans undergo precision mechanical sifting. This is followed by rigorous manual hand-sorting to remove any defective beans or foreign matter, ensuring that our Robusta Cherry A meets the strict purity standards required by global roasters.
