Prepared from high-quality Arabica Cherry beans, this selection undergoes a unique "monsooning" process along the Malabar Coast. Exposure to moisture-laden sea winds causes the beans to swell and turn a distinctive pale gold, resulting in a cup profile that is impossible to replicate anywhere else in the world.

The Craftsmanship

  • The Art of the Monsoon: This coffee is not merely processed; it is aged. Over 12–16 weeks, the beans are exposed to the winds of the Arabian Sea in specialised, open-sided warehouses. This transformation requires the constant vigilance of master curers to balance humidity and airflow.

  • Manual Raking: To ensure every bean is exposed equally to the sea air, the coffee is hand-raked and turned several times a day using traditional wooden tools. This labour-intensive ritual ensures a uniform change in colour and size.

  • Artisanal Sorting: Because monsooned beans are delicate and soft, they undergo a rigorous Manual Hand-Sorting. Skilled workers inspect the beans to remove any that are "under-monsooned," ensuring only the boldest, most golden pearls make it into our export lots.
