Ragi is a nutrient-dense grain that is a staple in Indian cuisine and is gaining global recognition for its health benefits. It is especially popular in the southern parts of India, where it is often used in breakfast dishes. Ragi is rich in calcium, potassium, minerals, and protein.This high protein content makes finger millet a very important factor in preventing malnutrition. The main protein fraction is eleusinin, which has a high biological value, meaning that it is easily incorporated into the body.
